This is a question Urvi and Nikesh Gala asked themselves repeatedly as they charted the course for their brand, The Dessert Republic\u00ae, a dessert caf\u00e9\u00a0inspired by\u00a0the founders\u2019\u00a0passion, knowledge\u00a0of the\u00a0dessert space, and travels across\u00a0the globe.<\/p>\n
With an aggressive appetite for innovation and fire in their bellies, Urvi and Nikesh\u00a0set out to push the boundaries\u00a0of dessert. The\u00a0idea\u00a0was\u00a0to reinvent\u00a0what the everyday\u00a0consumer knew\u00a0of dessert and through countless experiments and relentless testing, they\u00a0crafted the\u00a0extensive menu that is available today\u00a0at The Dessert Republic\u00ae\u00a0and\u00a0continue to add\u00a0more inventive desserts to it.<\/p>\n
\u201cFrom\u00a0the outset, we were clear that\u00a0we\u00a0wanted The Dessert Republic\u00ae\u00a0to be an experience like no other. And when it\u00a0came to\u00a0the dessert, we wanted to bring the phrase, \u201clike\u00a0a child in a candy\u00a0store\u201d to\u00a0life.\u00a0That\u2019s the feeling we want to evoke\u00a0when\u00a0you visit The\u00a0Dessert Republic\u00ae.\u201d says co-founder Urvi Gala. Co-founder Nikesh Gala adds, \u201cWe have an\u00a0endless variety\u00a0of dessert\u00a0options that\u00a0leave\u00a0you spoilt\u00a0for choice.\u00a0This was the niche\u00a0that we created in the market \u2013 serving\u00a0up inventive and indulgent\u00a0desserts in\u00a0the\u00a0market.\u201d<\/p>\n
We\u00a0have\u00a0to say\u00a0we\u00a0agree!\u00a0Almost every\u00a0item\u00a0on the menu is a\u00a0testament\u00a0to The Dessert Republic\u00ae\u2019s culinary\u00a0ingenuity.\u00a0We walked into the dessert caf\u00e9 on a\u00a0very\u00a0humid\u00a0day\u00a0and were\u00a0yearning for something\u00a0cool. The\u00a0staff recommended the glorious Pop Me Purple, a refreshing Japanese\u00a0yuzu\u00a0cooler topped off with a shot of blue pea tea. Curious about the unique name, we went through the menu\u00a0and were astounded to see the sheer variety\u00a0of inventive dishes on the\u00a0menu.<\/p>\n
The\u00a0Greek Waffle Bites piqued our interest, and we found the\u00a0concept\u00a0very\u00a0interesting. Inspired by\u00a0Urvi and Nikesh\u2019s travels to Greece\u00a0where they\u00a0tried gaufres (more commonly known as waffles in the West), the Greek Waffle\u00a0Bites are The\u00a0Dessert Republic\u00ae\u2019s unique take on gaufres with\u00a0a twist \u2013 they\u00a0come in the form\u00a0of crispy,\u00a0bite-sized loaded waffles. And this is just the tip\u00a0of the iceberg. In the few hours we spent at\u00a0this dessert caf\u00e9, we tried a variety\u00a0of drinks and dishes, such as the Mexican Hot Nachos, the Mocha Crackle\u00a0Candy Waffle, the Berry\u00a0Berry\u00a0Mochi Ice Cream,\u00a0the Brownie and Salted Caramel\u00a0Popcorn Binge Bowl, the Iceberg Cookie Cream Creamsicle, and beverages such as the Kaffir Lime, Pink Dash, Cocoa Crunch On The\u00a0Rocks Frappe, and the Kashmiri\u00a0Kahwa. Another inventive\u00a0take on desserts, the Chef\u2019s Inventions caught our fancy,\u00a0especially\u00a0the Hazelnut Spin Pull Me Out \u2013 a\u00a0pull-me-up\u00a0nutty\u00a0twist drizzled with chocolate.<\/p>\n
It\u2019s not just the\u00a0desserts\u00a0that\u00a0steal the show. There\u2019s something to be said about the meticulously\u00a0curated ambience, with games, books, and an Instagram-worthy\u00a0cosy\u00a0nook.\u00a0The founders spent close\u00a0to 6\u00a0months working\u00a0on getting\u00a0the interiors right and they\u00a0have ensured that\u00a0the ambience\u00a0is distinctive at each of their outlets in Mumbai, Vadodara, and New Delhi. As\u00a0the evening went by, we saw just how many\u00a0loyal patrons queued up to experience\u00a0the joy of desserts\u00a0\u2013 and what we loved about\u00a0seeing them\u00a0line up was\u00a0the concept of the\u00a0Smile\u00a0Door\u00a0\u2013 where patrons have to flash a smile\u00a0at the door camera in order for the door to slide open so that\u00a0they\u00a0can enter. The founders have\u00a0also spent 18\u00a0months finessing their endless\u00a0exploration of desserts down to a singular\u00a0menu. The brand has had people visiting\u00a0its Mumbai outlet repeatedly, travelling all the way\u00a0from\u00a0not just different\u00a0parts of Mumbai, but across the country\u00a0and also Dubai, Zambia, New Zealand, and\u00a0the USA.<\/p>\n
